Ingredients

2 quarts water
1 cup kosher salt

1 cinnamon stick , broken into several pieces
1 teaspoon mustard seeds
1 teaspoon black peppercorns
8 whole cloves
8 allspice berries
12 whole juniper berries
2 bay leaves , crumbled
1/2 teaspoon ground ginger
2 lbs ice
1 beef brisket , trimmed
1 small onion , quartered
1 large carrot , coarsely chopped
1 stalk celery , coarsely chopped
5 potatoes , peeled and halved
1 lb baby carrots
1 whole cabbage , quartered

Instructions

1.In a large pot, combine the water, kosher salt, brown sugar, saltpeter, cinnamon stick, mustard seeds, black peppercorns, cloves, allspice berries, juniper berries, bay leaves, and ginger. Stir until the salt and sugar are dissolved.
2.Add the ice and brisket to the pot. Make sure the brisket is fully submerged in the brine mixture. Cover the pot and refrigerate for 3 days.
3.After 3 days, remove the brisket from the brine mixture and rinse it thoroughly.
4.Place the brisket in a large pot and cover it with water. Add the onion, carrot, and celery to the pot. Bring the water to a boil, then reduce the heat to low and let the brisket simmer for 2 to 3 hours.
5.Add the potatoes, baby carrots, and cabbage to the pot. Continue to simmer for an additional 30 minutes.
6.Remove the brisket, vegetables, and spices from the pot. Let the brisket rest for 10 to 15 minutes before slicing. Serve with the cooked vegetables and a dollop of mustard, if desired.
