Ingredients

115 g grated strong cheddar cheese
1 egg
150 ml double cream
2 medium potatoes or 2 large potatoes
30 g butter
1 pinch salt
1 pinch pepper
1 large onion

Instructions

1.Preheat the oven to 190°C/375°F/gas mark 5.
2.Slice the potatoes thinly.
3.Heat a knob of butter in a frying pan and sauté the onion until it is soft and translucent. Take off the heat.
4.Whisk the egg and double cream together in a bowl, add a pinch of salt and pepper.
5.Layer half the sliced potatoes in an ovenproof dish, then add the sautéed onions and half the grated cheese. Season with salt and pepper. Layer the rest of the potatoes on top.
6.Pour over the cream and egg mixture and press the potatoes down to ensure they are covered. Top with the rest of the grated cheese.
7.Cover with foil and bake for 45 minutes. Remove the foil and bake for another 30 minutes until golden.
