Irish and Scottish Gaelic Soda Bread Scones are a variation on the traditional soda bread recipe, made in the form of scones for a more rustic and casual feel. They combine plain white flour with wholemeal for a slightly healthier twist. The dough comes together quickly with the help of buttermilk and bakes in just 20-25 minutes. Serve these scones as part of a simple breakfast or with soup for a light lunch.

Instructions

1.Preheat the oven to 220°C.
2.Mix the flours, bicarbonate of soda, and salt together in a mixing bowl until well combined.
3.Pour buttermilk into a well in the flour mixture, and mix slowly and gently to bring the mixture together with a spoon until it forms a soft dough.
4.Turn the dough out onto a floured surface, and knead gently for 1-2 minutes.
5.Form the dough into a circle 4 cm thick by gently pressing it out, and transfer the circle to a floured baking tray.
6.Cut the circle into 6 wedges, and separate the scones so they are not touching.
7.Bake in the preheated oven for 20-25 minutes or until brown and crisp.
