Champit Tatties is a comfort food from Scotland that combines mashed potatoes with sour cream, chives, and a variety of optional toppings for a festive and flavorful side dish. Unlike traditional mashed potatoes, Champit Tatties packs a punch with its balancing mix of flavors and crunchiness. In addition, the traditional garnish of skirlie oats and bacon adds texture and depth to the dish. Champit Tatties can be served with a wide range of entrees, from meats to veggies, and is ideal for cold winter nights or special occasions.

Instructions

1.Peel and cube the potatoes and place them in a pot of water. Bring the water to a boil and cook the potatoes until they are soft, for about 20-25 minutes.
2.Drain the potatoes and reserve about 1/4 cup of the cooking water.
3.Add the butter, nonfat sour cream, chives, salt, and pepper to the pot with the potatoes and mash them until they reach the desired consistency. If the potatoes are too dry, add some of the reserved cooking water.
4.Serve the mashed potatoes hot, garnished with snipped parsley and optional toppings such as skirlie oats and crumbled bacon.
