Ingredients

8 large russet potatoes
1 1/2 lbs green cabbage , coarsely chopped ( about 5 cups )
1 cup full-fat milk ( or use half and half cream )
3 cups sliced cooked corned beef , coarsely chopped ( can use more )
3/4 cup melted butter , divided
salt and black pepper
2 cups grated cheddar cheese ( or to taste )

Instructions

1.Preheat the oven to 400 degrees F (200 degrees C) and line a baking sheet with parchment paper.
2.Poke the potatoes all over with a fork and place them on the prepared baking sheet. Bake for about 1 hour, or until fork-tender.
3.In a large skillet, heat 1/4 cup melted butter over medium heat. Add the chopped cabbage and cook, stirring occasionally, until softened and lightly browned, about 10 minutes.

7.Stuff the potato skins with the mashed potato mixture, and top with the remaining cheddar cheese. Return the potatoes to the oven and bake for an additional 15-20 minutes, until the cheese is melted and bubbly.
