2 lbs shoulder lamb chops , about 1-inch thick

1/2 cup guinness beer or 1/2 cup any dark beer
1 lb new potato
1 lb baby carrots , peeled
1 pint white pearl onion , peeled
4 cups lamb stock
2 tablespoons dark roux
2 tablespoons finely chopped fresh parsley leaves

Instructions

1.Preheat the oven to 350°F.

5.Bring everything to a simmer, then cover and transfer to the oven.
6.Bake for about 1 1/2 to 2 hours, or until the lamb is tender, stirring occasionally.
7.Once the lamb is cooked, add the dark roux and chopped parsley to the stew, stirring until the roux is fully incorporated and thickens the sauce.
