Ingredients

3 lbs lamb necks , slices fat trimmed and reserved
4 medium onions , thinly sliced
1 medium onion , chopped
1 lb medium carrot , peeled , halved crosswise and quartered lengthwise
1 lb medium boiling potato , peeled , one sliced thinly , remainder quartered
3 cups lamb stock or beef broth
4 tablespoons minced fresh parsley
salt & freshly ground black pepper

Instructions

1.In a large pot or Dutch oven, heat the trimmed lamb neck fat over medium-low heat until crispy and brown.
2.Remove the fat from the pot and set aside.

4.Return the lamb neck slices to the pot and add in the chopped onion, carrot, sliced and quartered potatoes, and lamb stock or beef broth.
5.Bring the mixture to a boil, then reduce heat to low and simmer until the lamb is tender, about 2 hours.
6.Season with salt and pepper to taste, and sprinkle with minced fresh parsley before serving.
