Ingredients

8 thick slices-hickory smoked bacon
8 fresh pork sausages
2 garlic cloves
2 large onions , julienne
4 medium sized yukon gold potatoes
1 lb cremini mushroom
1 1/2 cups beef broth
1 bottle Guinness stout ( beer )
2 tablespoons fresh thyme
2 tablespoons unsalted butter
As the name suggests, Irish Stew is a classic Irish dish that has been around since the 1800s. It originally started as a way for Irish peasants to use cheap cuts of lamb in a stew with simple ingredients like onions and potatoes. This version, however, uses sausages for extra flavor. The addition of Guinness adds a richness that makes the stew particularly special and has become a popular addition to this recipe. While this stew may not be the most glamorous-looking, one taste and you'll be hooked on its hearty goodness.

Instructions

1.In a large pot, cook the bacon over medium heat until crisp. Drain on paper towels and crumble into small pieces.
2.Brown the sausages in the bacon grease and set aside.
3.In the same pot, saute the garlic and onions until soft and translucent. Add the sliced potatoes and mushrooms and cook until mushrooms have reduced in size.
4.Add the beef broth, crumbled bacon, browned sausages, Bottle of Guinness stout and the fresh thyme.
5.Bring the mixture to a boil and reduce to a simmer, cover and cook for about one hour or until the potatoes are fork-tender and the sausages are fully cooked.
6.Stir in the butter and let it melt before removing the pot from the heat.
