Pennsylvania Dutch Classic Devils is a classic appetizer known for its beautiful ruby-red color and tangy-sweet taste. Traditionally served during celebrations in the Pennsylvania Dutch community, it has become a popular dish for parties and get-togethers. The eggs are hard-cooked, filled with a mixture of mayonnaise, mustard, Worcestershire sauce, lemon juice, and mashed yolks, that are then pickled along with beets in a delicious allspice and cinnamon flavored liquid. This recipe is easy to prepare and makes for a perfect appetizer that can be assembled a day prior to the event.

Instructions

1.Drain the pickled beets, reserving 1/2 cup of the liquid.
2.In a saucepan, combine the reserved liquid, white vinegar, sugar, allspice, and cinnamon stick halves. Bring the mixture to a boil, reduce heat, and simmer for 15 minutes, stirring occasionally.
3.Add the beets to the saucepan and simmer for an additional 5 minutes. Remove the saucepan from heat and let cool to room temperature.
4.Cut the eggs in half lengthwise and remove the yolks. In a mixing bowl, mash the yolks and add the mayonnaise, mustard, Worcestershire sauce, lemon juice, and salt.
5.Fill the egg white halves with the yolk mixture, and place them in the pickling liquid, making sure the liquid covers the eggs. Refrigerate your Devils overnight for a better taste.
