Ingredients

8 oval- shaped thin veal cutlets
salt
2 eggs , separated
2 slices dry white bread
1/4 lb lean veal , ground
1/2 teaspoon white pepper , freshly ground
1/2 teaspoon black pepper , freshly ground
1/4 teaspoon nutmeg
2 tablespoons lemon juice
1 cup fine dutch rusk crumb
4 tablespoons sunflower margarine
8 lemon slices
parsley , for garnish
Blinde Vinken, or literally translated as 'Blind Finches,' is a classic Dutch recipe that has been around for many years. It's essentially thin slices of veal stuffed with a mixture of ground veal and seasoned with a variety of spices. The veal rolls are pan-seared first to create a crust and then baked in the oven for a juicy finish. This delicious dish is traditionally served with mashed potatoes, mushrooms, and gravy.

Instructions

1.Preheat your oven to 180°C.
2.Next, flatten the veal cutlets with a meat mallet or a rolling pin and season them with some salt.
3.Separate the eggs and whisk together the egg yolks.
4.Make bread crumbs by grinding the dry white bread slices in a food processor.
5.In a large bowl, mix together the ground veal, 1 egg white, white pepper, black pepper, nutmeg, and lemon juice until a uniform mixture forms.
6.Take a small scoop of the veal mixture and put it on one end of a veal cutlet. Role into a neat package, tuck in the ends and secure the sides with toothpicks.
7.First, dip the veal rolls in egg white and then coat it with fine Dutch rusk crumb.
8.In a large hot skillet, melt the sunflower margarine and brown the rolls over medium-high heat on both sides.
9.Place the seared rolls into the oven for around 10-15 minutes.
10.Garnish with lemon slices and parsley before serving.
