Ingredients

3 eggs
3/4 cup cider vinegar
1 1/2 tablespoons dry mustard
2 teaspoons sugar ( optional )
1 teaspoon salt
1/2 teaspoon celery seed
1/8 teaspoon fresh ground pepper
3 tablespoons butter ( I think bacon fat is better ! ) or 3 tablespoons bacon fat ( I think bacon fat is better ! )
2 tablespoons all-purpose flour
1 cup milk
7 cups shredded green cabbage
3/4 cup minced onion
1/2 cup chopped pimiento
1/2 cup sour cream
1/4 cup minced celery
1/4 cup minced green pepper
3 tablespoons minced fresh parsley
salt & freshly ground black pepper

Instructions

1.In a medium-sized saucepan over medium-high heat, bring the eggs to a boil for 10 to 12 minutes, then remove from heat.
2.Drain hot water and cover eggs with cold water, let stand for 10 minutes before removing the shell and chop the eggs.
3.In a small bowl, whisk together cider vinegar, dry mustard, sugar (optional), salt, celery seed and pepper.
4.In a large skillet over medium heat, melt bacon fat or butter, then add flour and whisk until smooth.
5.Gradually stir in milk until smooth, then cook and stir constantly until thickened.
6.Remove from heat and whisk in the whisked vinegar mixture.
7.In a large bowl, combine shredded cabbage, onion and pimiento, then pour the dressing over and toss to coat.
8.Cover and refrigerate for 1 hour or overnight.
9.Before serving, stir in sour cream, celery, green pepper and parsley then season with salt and freshly ground black pepper to taste.
