1/3 cup candied red cherries , quartered
1/3 cup candied peel
1 teaspoon ginger
1 teaspoon allspice
1 teaspoon ground cinnamon
6 ounces almond paste
1 tablespoon icing sugar

Instructions

1.In a bowl, Combine whole wheat flour and instant yeast
2.Warm the coconut milk to body temperature and whisk in the egg, followed by the brown sugar and salt.
3.Add the softened butter and stir until combined
4.Add the flour and yeast mixture to the bowl with the liquid mixture, stir to form a soft dough.
5.Knead the dough on a floured surface for 10 minutes, adding more flour as needed to prevent sticking.
6.Rinse out the bowl and dry it, then grease with oil and place the dough inside, cover with a damp cloth and let the dough rise for 1 hour.
7.Preheat oven to 350F and line a baking tray with parchment paper or grease with butter
8.To the risen dough, add currants, sultana raisin, candied red cherries, candied peel, ginger, allspice, and ground cinnamon, and knead the dough again.
9.Make the almond filling by combining almond paste and icing sugar into a smooth paste.
10.On a floured surface, roll out the dough to form a rectangle, lengthwise, with almond filling, in the center.
11.Fold the dough in half while still leaving a center section with the almond paste.
12.Carefully place the loaf onto the parchment paper in the baking tray and let it rise another 30 minutes
13.Bake for 30-35 minutes.
