Smoor ayam is an Indonesian dish that is popular in the Java and Bali regions. It is a sweet and savory chicken dish that is perfect for those looking for complex flavors with a hint of spice. It gets its name from the fact that the chicken is slow-cooked or simmered (Smoor) in a sweet soy sauce (ketjap manis) that is thick and glazed. The chicken is then served on a bed of white rice and garnished with sliced scallions. With the taste of soy sauce combined with the fragrance of nutmeg and the acidity of tomatoes, this dish is both simple and satisfying.

Instructions

1.In a large skillet, heat oil over medium-high heat and add onions and garlic. Cook till onions are translucent and garlic is fragrant (about 2-3 min).
2.Add chicken to the skillet and sauté until brown on all sides.
3.Add the quartered tomatoes and water to the skillet and bring to a boil.
4.Reduce heat to low and cover the skillet with a lid. Simmer for 20 minutes.
5.Remove the cover and add the sweet soy sauce, nutmeg, salt, and pepper to taste.
6.Simmer for another 10-15 minutes or until the chicken is fully cooked and the sauce has thickened.
7.Serve hot with steamed rice and garnish with sliced scallions, if desired.
