Ingredients

6 large onions
4 tablespoons butter
1/2 lb ground lean pork
2 tablespoons tomato puree
1/8 teaspoon nutmeg ( optional )
1/2 teaspoon salt
fresh ground pepper
6 tablespoons grated gouda cheese
1 cup beef broth or 1 cup beef bouillon

Instructions

1.Preheat oven to 375°F / 190°C
2.Carefully slice off the tops of each onion and remove outer layer.
3.Using an apple corer, remove the center of the onion, creating a small well. Reserve the centers and chop finely.
4.In a large sauté pan, melt the butter over medium-high heat.
5.Add the pork, reserved onion, tomato puree, nutmeg, salt, and pepper.
6.Cook for 5-7 minutes, stirring occasionally, until the pork is browned.
7.Fill each onion with the pork mixture and place in a baking dish.
8.Pour the beef broth or bouillon over the onions.
9.Cover the baking dish with foil and bake for 45-50 minutes until the onions are tender.
10.Sprinkle each onion with a tablespoon of gouda cheese and return to the oven, uncovered, for another 5 minutes or until the cheese is melted and bubbly.
