Pancakes are a staple breakfast food in many cultures and have many regional variations. In Iceland, they are known as Ponnukokur and are often served with whipped cream and jam or sugar. They are similar to crêpes in appearance but thicker and fluffier. Icelandic pancake batter is made with sour cream, which gives them a tangy flavor and a golden yellow color. These pancakes are usually eaten warm off the griddle, and leftovers can be stored in the fridge or freezer for later.

Instructions

1.Whisk together all-purpose flour, baking powder, baking soda and salt in a large bowl.
2.In a separate bowl, whisk together eggs and sour cream until smooth. Stir in vanilla extract, milk and melted butter.
3.Pour the wet ingredients into the dry ingredients and stir with a wooden spoon or whisk until smooth.
4.Heat a pancake griddle or a nonstick skillet over medium-low heat. Coat the surface with cooking spray or butter if desired. Using a 1/4-cup measure, pour the batter onto the griddle or skillet, spreading it out with the back of the cup.
5.When the edges are dry and the surface is bubbling, flip the pancake with a spatula. Cook until golden brown on both sides.
