Ingredients

1 kg stewing mutton
1 tablespoon flour
1 tablespoon butter
pepper , salt , thyme , rosemary
2 garlic cloves
250 g peeled tomatoes
1/4 lt. red wine
1/2 lt. mutton broth
1/4 lt. water
250 g butter
garlic , shallot , onion , parsley

Hammelsragout is a Danish take on the classic lamb stew. It is a warming and satisfying dish that is enjoyed across Scandinavia, particularly during the colder months. Instructions

1.Preheat the oven to 200°C.
2.Cut the mutton into small cubes and season with salt and pepper.
3.In a deep casserole dish, heat the butter over medium heat. Add the mutton and brown on all sides.
4.Add the flour, garlic, shallot, and onion. Cook for a few minutes until the vegetables are soft.
5.Add thyme, rosemary, and peeled tomatoes. Stir to combine.
6.Pour in the red wine, mutton broth, and water. Bring to a boil, then cover and transfer to the oven.
7.Cook for about 2 hours or until the mutton is tender.
8.In a separate pan, melt the butter and cook the parsley until crispy. Serve sprinkled on top of the Hammelsragout.
