20 fresh medjool dates , pitted
5 eggs
4 cups cultured buttermilk
4 cups yogurt
1 teaspoon vanilla extract
1 organic lemon , juice & zest
1 pint strawberries or 1 pint raspberries

Instructions

1.In a blender, blend the pitted dates with a half a cup of buttermilk and set aside.

3.Slowly add buttermilk, yogurt, and date puree in a bowl and mix well.
4.Beat egg whites until they form stiff peaks and fold into the mixture.
5.Chill the mixture in the refrigerator for a couple of hours or overnight before serving.
6.Slice the strawberries or raspberries and add them as toppings to the cold soup before serving.
