Ingredients

1 - 1 1/2 ounce dried porcini mushrooms ( cepes )
13 cups water or 13 cups stock ( or more )
2 small carrots ( optional )
2 small turnips ( optional )
2 small onions
2 medium potatoes ( optional )
2 stalks celery & leaves ( optional )
3/4 cup pearl barley
sour cream ( optional )

Instructions

1.Soak the porcini mushrooms in hot water for up to 30 minutes or until soft.
2.In a large pot, bring the 13 cups of water or stock to a boil.
3.Add the mushrooms and their liquid to the pot.
4.If using, add the carrots, turnips, onions, potatoes, celery and barley to the pot.
5.Simmer for 50-60 minutes or until barley is tender.
6.Let the soup cool before serving. Optional: add a dollop of sour cream on top.
