Ingredients

2 cups flour
1 cup milk
1 egg
1/2 cup sour cream
2 1/2 lbs russet potatoes
1 lb cheddar cheese , Shredded
1 lb onion , Diced
Pierogies are a traditional Polish dish that are often enjoyed in other Eastern European countries as well. Bubka's Homemade Pierogies are a delicious and comforting dish that will remind you of your grandma's cooking. The dough is soft and pillowy and the filling is cheesy and savory. You can use any filling you like such as mashed potatoes and onions, sauerkraut and mushrooms, or ground meat.

Instructions

1.Preheat oven to 350°F
2.In a large bowl, mix flour, milk, egg, and sour cream. Knead until dough forms. Cover and let rest for 10 minutes
3.In a large pot, add the peeled & cubed potatoes and cover with water. Bring to a boil and let cook until potatoes are tender. Drain.
4.Mash the potatoes and mix in the shredded cheddar cheese and diced onions.
5.Flour your work surface and roll out the pierogi dough. Cut into circles using a biscuit cutter or glass
6.Spoon filling onto one half of each dough circle and fold the other half over. Press edges together with a fork to seal
7.Bring a large pot of salted water to a boil. Add pierogis and boil for 2-3 minutes.
8.Place boiled pierogis on a baking sheet greased with cooking spray and bake in oven for 20 minutes.
