3/4 cup raisins ( or craisins )
3/4 cup toasted almond
2 eggs
2 tablespoons flax seed meal ( ground up flax seeds )
1/2 cup oil
2 cups flour ( my Gluten-Free Flour MIX # 53741 works well )
1/2 cup oats ( quick cooking )
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon almond extract
ground cinnamon ( optional )
Polish Apple Cake, also known as Jablecznik, is a classic dessert from Poland. The cake is made with fresh apples, raisins, and almonds, which are all readily available ingredients in most households. Instructions

1.Preheat the oven to 350°F (175°C).
2.Peel and slice the apples into thin wedges and toss them with 1/4 to 1/2 cup of sugar, depending on their tartness.
3.Add raisins (or craisins) to the apple mixture, along with half of the toasted almonds.
4.In a separate bowl, whisk together eggs, flax seed meal, and oil.
5.Add flour, oats, baking soda, baking powder, and almond extract to the egg mixture and stir until just combined.
6.Fold the apple mixture into the batter and pour the mixture into a greased 9-inch (23-cm) square baking dish.
7.Sprinkle the remaining toasted almonds and cinnamon (optional) on top.
8.Bake the cake for approximately 50-60 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
