Ingredients

8 medium potatoes , baked
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 lb bacon , cooked and drained ( or 1 bottle Hormel bacon pieces )
2 cups sour cream ( I used light sour cream )
1 package light cream cheese
3 cups shredded cheddar cheese ( I used sharp cheddar )
2 green onions , chopped
Twice Baked Potato Casserole is a classic comfort food dish that has been popular for generations. This version of the dish adds bacon, cheese, and sour cream to give it a rich and savory flavor. Instructions

1.Preheat oven to 375°F.
2.In a large bowl, combine the potatoes, garlic powder, salt and pepper. Mash the potatoes with a fork or potato masher until smooth.
3.Add the cooked and crumbled bacon, sour cream, cream cheese, and 2 cups of the shredded cheddar cheese. Mix well.
4.Spread mixture evenly in a 9x13 inch baking dish.
5.Sprinkle the remaining shredded cheese and chopped green onions over the top.
6.Bake in preheated oven for 25-30 minutes or until cheese is melted and bubbly. Serve hot.
