Pierogies are a traditional Polish dish that has been enjoyed for centuries. They are small pockets of dough filled with mashed potatoes and cheese, boiled and then served with melted butter. Some also like to top them with caramelized onions or sour cream. Pierogies can be served as a main course or as a side dish. Many cultures around the world have similar dumpling dishes, such as Chinese jiaozi or Italian ravioli. Pierogies are an easy and satisfying dish that is perfect for a family gathering or a cozy night in.

Instructions

1.In a mixing bowl, combine flour, sour cream, eggs and salt. Knead dough until it becomes smooth. Cover with a clean cloth and allow it to rest for 30 minutes.
2.Peel potatoes and chop them into similar-sized pieces. In a saucepan, boil potatoes until they are cooked and tender. Drain and mash the potatoes and then add cheddar cheese. Mix well and allow it to cool.
3.Roll out the dough on a floured surface until it is 1/8 inch thick. Cut the dough into circles using a biscuit cutter or a glass. Spoon the potato and cheese filling into the center of each circle. Fold the dough over and seal the edges using the tines of a fork.
4.In a large pot, bring salted water to a boil. Drop the pierogies into the water and cook them until they float to the surface, about 5-7 minutes. Drain and serve hot. Pierogies can be fried in butter or oil to make them crispy and golden brown.
