1 1/2 lbs cottage cheese , room temperature
18 ounces cream cheese , room temperature
1 cup sour cream , room temperature

Instructions

1.Line a large colander with a cheesecloth.
2.In a large mixing bowl, add in cottage cheese, cream cheese, and sour cream. Mix them well with a spatula.
3.Pour this mixture into the cheesecloth-lined colander. Wrap the cheesecloth around the cheese and press down a little to remove access liquid.
4.Put this colander over a bowl or a sink to drain for at least 6-7 hours or overnight.
5.Once the cheese is drained to your desired consistency, take it out from the colander onto a plate.
