Vegetarian Polish Cabbage Rolls are a classic Polish dish that has been adapted to be meat-free. Instead of traditional ground beef or pork, these cabbage rolls use veggie crumbles as a plant-based protein source. Instructions

1.Preheat the oven to 375°F.
2.Bring a large pot of salted water to a boil. Gently remove the cabbage leaves from the head one at a time and submerge them in the boiling water for 1-2 minutes until softened. Remove the leaves from the water and set them aside to cool.
3.In a large mixing bowl, combine the cooked brown rice, veggie crumbles, minced onion, minced garlic, ground ginger, sweet paprika, chopped parsley, black pepper, and 2 beaten eggs. Mix well.
4.Grease a large baking dish with olive oil. Spread 1/4 of the can of diced tomatoes and 1/4 of the can of tomato soup on the bottom of the dish.
5.Take each cabbage leaf and place a spoonful of the rice mixture in the lower third. Roll the leaf up tightly around the filling, tucking in the ends as you go.
6.Arrange the cabbage rolls seam side down in the baking dish. Pour the remaining diced tomatoes and tomato soup over the cabbage rolls. Pour 1/2 cup vegetable broth over the rolls.
7.Cover the baking dish with a lid or aluminum foil and bake for 45 minutes to 1 hour, until the cabbage rolls are tender and the filling is hot.
