8 green onions , divided ( scallions )
1 1/2 cups low sodium chicken broth
1/2 cup water
2 2 tablespoons canola oil or 2 tablespoons butter
4 slices fresh ginger ( each slice 1/4-inch thick )
10 potato & cheese pierogies ( frozen )
1/4 cup fresh cilantro leaves ( chopped )
1 tablespoon toasted sesame seeds
1/3 cup soy sauce
1/4 cup orange juice
4 teaspoons rice wine vinegar
1 1/2 teaspoons finely minced crystallized ginger
1 tablespoon asian hot chili oil
2 teaspoons minced garlic

Instructions

1.In a small bowl, whisk together the soy sauce, orange juice, rice wine vinegar, finely minced crystallized ginger, asian hot chili oil, and minced garlic. Set aside.
2.Finely chop 4 of the green onions and set aside.
3.In a large skillet, heat the canola oil over medium-high heat. Add the sliced fresh ginger and sauté for 1-2 minutes, until fragrant.
4.Add the frozen pierogies to the skillet, flat-side down, and cook for 3-4 minutes until golden brown. Flip the pierogies and add the chicken broth and water to the skillet. Cover and let cook for 5-6 minutes, until the pierogies are cooked through.
5.Remove the lid and let the liquid cook down until it is mostly evaporated, about 1-2 minutes.
6.Add the chopped green onions and stir to combine. Cook for an additional 1-2 minutes, until the green onions are slightly softened.
7.Remove the pierogies from the skillet and place them on a serving dish. Sprinkle with chopped cilantro and toasted sesame seeds.
8.Serve with the orange-soy dipping sauce.
