Ingredients

1/3 cup part-skim ricotta cheese
1/4 cup asiago cheese ( plus additional for sprinkling ) or 1/4 cup romano cheese , grated ( plus additional for sprinkling )
1/4 cup frozen chopped spinach , thawed , squeezed and drained
salt , to taste
fresh ground black pepper , to taste
1 package refrigerated prepared pizza crust
1 egg yolk , beaten with
1 teaspoon water

Instructions

1.Preheat the oven to 400ºF (200°C).
2.In a small bowl, mix together the ricotta cheese, asiago or romano cheese, chopped spinach, salt, and pepper.
3.Unroll the pizza crust onto a lightly floured surface.
4.Cut the dough into twelve even squares.
5.Place a spoonful of the cheese mixture onto one half of each square of dough, leaving a small edge around the sides.
6.Fold the other half of the dough over the cheese, stretching the edges to seal the calzones closed.
7.Place the calzones on a baking sheet lined with parchment paper.
8.Brush the tops of the calzones with the egg wash and sprinkle with additional asiago or romano cheese, if desired.
9.Bake for 12-15 minutes or until golden brown.
