Ingredients

1 large egg
2 tablespoons milk
1/2 cup breadcrumbs , toasted
8 slices Italian bread , 1/4 inch thick each
1 3/4 teaspoons anchovy paste
1/4 lb buffalo mozzarella , a fist sized ball , cut into 4 , 1/4 inch thick slices
2 tablespoons olive oil
1 tablespoon unsalted butter
1 tablespoon fresh lemon juice
1 plum tomato , seeded and minced
1/4 teaspoon green peppercorns in brine , drained
fresh parsley , finely chopped for garnish

Instructions

1.In a shallow dish, beat the egg with the milk and a pinch of salt until blended.
2.Put the breadcrumbs in another shallow dish and stir in the anchovy paste.
3.Dip each slice of bread in the egg mixture to coat, letting any excess drip off.
4.Now coat the bread slices in the breadcrumb mixture.
5.Arrange the cheese slices on 4 of the bread slices, trimming them to fit, and season with salt and pepper.
6.Top with the remaining 4 bread slices, pressing firmly to seal.
7.In a large skillet, heat the olive oil with the butter over medium heat.
8.Add the sandwiches and cook, turning once, until golden brown, about 3 minutes per side.
9.Drain them on paper towels before transferring them to a serving plate.
10.In a small bowl mix the lemon juice, tomato, peppercorns, and parsley.
11.Then sprinkle the mixture of fresh parsley over Mozzarella in Carrozza and serve.
