6 -8 large red bell peppers
2 tablespoons olive oil
1 tablespoon lemon juice
3 tablespoons capers
2 garlic cloves , peeled

Instructions

1.Preheat your broiler to high.
2.Cut the bell peppers into quarters and remove the stem, seeds and membranes.
3.Place the peppers skin side up on a baking sheet.
4.Broil the peppers for 10-15 minutes or until the skin is charred and blistered.
5.Remove the peppers from the oven and transfer them to a large shallow dish. Cover with foil or plastic wrap and let them steam for 15-20 minutes.
6.In the meantime, prepare the dressing by whisking together the olive oil, lemon juice, capers and garlic in a small bowl.
7.Once the peppers have cooled down, remove the skins by gently pulling them off the flesh. Cut the peppers into thin strips.
8.Place the pepper strips in a serving dish and pour the dressing over them.
9.Serve at room temperature or chill in the refrigerator for a few hours before serving.
