100 g cheese , grated ( I used pecorino , parmesan would probably do fine as well , take whatever you like best )
50 ml milk
3 egg whites , whisked slightly
2 tablespoons fresh thyme
salt , to taste
pepper , to taste
nutmeg , to taste
