Instructions

1.In a bowl whisk the egg yolks and add milk, cayenne pepper, salt, black pepper, gruyere cheese, ricotta cheese, and parmesan cheese.
2.In another bowl beat the egg whites to soft peaks and fold them into the cheese mixture.
3.Preheat the oven to 325°F.
4.Grease timbale molds with butter or oil.

6.Fill the dish up to 1 inch with hot water.
7.Bake for 45 minutes.

9.Add tomato paste, water, thyme, salt, and pepper to the pan. Simmer for 10 minutes so that the flavors are well combined.
10.Take the timbales out of the oven and let them cool.
11.Run a knife around the edges of each timbale and invert them onto a plate.
12.Pour tomato coulis over the timbales and serve.
