12 baby artichokes
2 lemons
4 mashed garlic cloves
1/2 cup Italian seasoned breadcrumbs

Instructions

1.First of all, clean the baby artichokes by removing the outside leaves and the thorny tops. Cut off the stem at the base and rub with lemon juice immediately to avoid discoloration. Halve the artichokes lengthwise.
2.Boil the artichokes in salted water until tender, about 10 minutes. Drain the artichokes and let them cool.
3.Preheat the oven to 180C. Line a baking sheet with parchment paper.
4.In a bowl, mix together breadcrumbs, mashed garlic, salt, pepper, and extra virgin olive oil.
5.Dredge each artichoke half in the breadcrumb mixture and place cut-side up on the prepared baking sheet. Drizzle extra olive oil on top of each artichoke.
6.Bake the artichokes until the breadcrumbs are golden brown and crisp, about 7-10 minutes. Serve immediately and enjoy!
