Ingredients

2 cups water
6 cups organic low sodium chicken broth or 6 cups homemade chicken stock
4 cups polenta
2 bay leaves

1 -2 cup semolina flour
canola oil ( for frying )
1 tablespoon butter
2 tablespoons white wine vinegar
6 shallots , sliced thin
1 garlic clove , sliced thin
2 cups heavy cream
2 cups gorgonzola

Instructions

1.In a large pot, bring water and chicken broth or stock to a boil. Add polenta, bay leaves, white pepper, and salt. Stir well and reduce heat to low. Simmer for 45-50 minutes, or until the polenta is thick, smooth and pulls away from the sides of the pan.
2.Add mascarpone cheese and stir until well combined. Pour the polenta into a baking dish and let cool. Refrigerate for at least 30 minutes or until completely cooled off.
3.Once cooled, use a cookie cutter or knife to cut the polenta into french fry shapes. Coat them with semolina flour and shake off any excess.
4.In a large skillet, heat enough canola oil over medium-high heat until it reaches 375°F. Then, gently add the polenta fries to the oil and fry them until crispy and golden brown for 2-3 minutes.
5.For the Gorgonzola Fonduta sauce, melt butter over medium heat in a small saucepan. Add shallots and garlic, cook until soft. Add white wine vinegar and heavy cream and simmer until it has a thick and creamy consistency. Add gorgonzola and stir until melted.
6.Serve the fries with Gorgonzola Fonduta sauce for dipping.
