Ingredients

2 pints cherry tomatoes , halved ( can be mixed colors )
2 green onions , coarsely chopped
1/4 cup parsley , finely chopped
1 1 tablespoon fresh oregano or 1 tablespoon fresh rosemary , finely chopped

1/3 cup extra virgin olive oil
3 tablespoons balsamic vinegar
salt and pepper
3 -4 tablespoons extra-virgin oil

4 slices artisan bread ( large thick slices ) or 4 slices other crusty bread ( large thick slices )
4 slices provolone cheese
1/4 1/4 cup romano cheese or 1/4 cup parmesan cheese

Instructions

1.In a large mixing bowl, combine cherry tomatoes, green onions, parsley, oregano or rosemary, garlic, balsamic vinegar, extra virgin olive oil, salt, and black pepper. Stir to combine until ingredients are well coated with marinade.
2.Cover the mixing bowl and let it sit for 15 minutes to allow the flavours to develop.
3.Preheat oven to 350°F.
4.Slice bread into thick slices and place them on a baking sheet in a single layer.
5.Combine extra-virgin olive oil and minced garlic in a small bowl. Brush the bread slices generously with olive oil and garlic mixture on both sides. Turn the bread slices over and top with provolone cheese. Place them in the oven and bake until the cheese melts.
