Ingredients

1 head cabbage , chopped
8 -10 ounces smoked ham hocks
2 eggs ( room temperature )
1/2 cup parmesan cheese
1/4 cup Italian seasoned breadcrumbs
1 teaspoon Tony Chachere 's Seasoning
1/4 - 1/2 cup olive oil
7 cups water
Italian Cabbage Patties are savory patties made with cabbage and eggs that have their origin in Italian cucina povera, the cuisine of the poor. They were created to use the inexpensive ingredients that every house had in their pantry. These patties are crispy on the outside and soft on the inside. Instructions

1.In a large pot, bring 7 cups of water to boil.
2.Add ham hocks to the boiling water and cook for 30 minutes.
3.Remove ham hocks and add chopped cabbage to the boiling water. Cook until tender and then drain.
4.In a mixing bowl, whisk together eggs, parmesan cheese, breadcrumbs, and Tony Chachere's Seasoning.
5.Add drained cabbage and mix all ingredients well.
6.Preheat olive oil in a large skillet over medium heat. Shape the patty mixture into patties and fry until golden brown on both sides (about 5-7 minutes each side). Drain on paper towels and serve hot.
