Ingredients

1 1/2 cups fresh breadcrumbs ( Italian or French bread , crusts included )
1/4 cup finely chopped fresh parsley
2 ounces parmesan cheese , grated
2 ounces pecorino romano cheese , grated
1 tablespoon italian seasoning ( or mixed dried herbs like thyme , oregano , savory , etc . )
1 teaspoon coarse salt
fresh ground pepper
3 packages frozen artichoke hearts , thawed and drained
2/3 cup extra virgin olive oil , more to oil the baking dish
1 teaspoon finely grated lemon zest
1/4 cup fresh lemon juice ( about 2 lemons )
2 garlic cloves , minced

Similar to a gratin, this dish features a delicious breadcrumb and cheese topping that blends perfectly with the lemon and garlic dressing of the artichoke hearts. They will go perfectly with a cold glass of Sauvignon Blanc. Note that the texture of artichokes is quite creamy and filling, so it may not be ideal as a first-course dish.

Instructions

1.Preheat the oven to 375°F.
2.In a bowl, combine the breadcrumbs, parsley, parmesan and pecorino cheeses, herbs, 1/2 tsp salt, and pepper to taste.
3.In a second bowl, add the artichoke hearts and 1/3 cup olive oil along with lemon zest, lemon juice, garlic, and remaining 1/2 tsp salt. Toss to evenly coat.
4.Set aside 1/2 cup of the breadcrumb mixture. Take the remaining breadcrumb mixture and coat the artichoke hearts with it. Shake off any excess breadcrumbs to prevent them from burning.
5.Arrange the artichokes in an oiled 9x13 inch baking dish. Sprinkle the remaining breadcrumbs on top.
6.Drizzle the remaining oil over the artichokes.
7.Bake for 35-40 minutes or until golden brown and serve.
