Ingredients

3 cups leftover cooked risotto rice
1/2 cup grated parmesan cheese
2 tablespoons heavy cream
2 2 tablespoons oregano or 2 tablespoons basil
1 large egg yolk
salt & freshly ground black pepper
5 ounces mozzarella cheese or 5 ounces Fontina cheese
all-purpose flour ( for dredging )
2 cups tomato sauce
1 large egg whisked with 2 tbsp cold milk or 1 large water
1 cup fresh white breadcrumbs
vegetable oil , for deep-frying

Instructions

1.In a large bowl, mix together the leftover risotto rice, grated parmesan cheese, heavy cream, oregano or basil, and egg yolk until well combined.
2.Season with salt and freshly ground black pepper to taste, and stir again.
3.Cut the mozzarella or Fontina cheese into small cubes, about 1/2 inch thick.
4.Take a small amount of the risotto mixture and shape it around one of the cheese cubes, forming a ball. Repeat with the remaining cheese and risotto mixture.
5.Dredge each ball in flour, then dip it in the egg and milk or water mixture, and roll it in the breadcrumbs.
6.Heat the vegetable oil in a large saucepan or deep fryer to 350°F.
7.Carefully drop the croquettes into the hot oil in batches, cooking for about 2-3 minutes or until golden brown on all sides.
8.Remove to paper towels to drain any excess oil.
9.To make the tomato sauce, heat a small amount of olive oil in a saucepan and cook the tomato sauce until heated through.
10.Serve the croquettes hot, with the tomato sauce on the side for dipping.
