Ingredients

1 1 lb canned plum tomatoes ( I prefer Redpack brand ) or 1 1/2 cups chopped drained canned plum tomatoes ( I prefer Redpack brand )
1/4 cup olive oil
1 onion , finely chopped
2 cups finely diced italian pancetta or 2 cups bacon
1/4 - 1/2 teaspoon crushed red pepper flakes
1 cup dry white wine or 1 cup dry vermouth
salt
1 lb bucatini pasta or 1 lb spaghetti
1/4 cup freshly grated parmesan cheese
2 tablespoons grated pecorino cheese

Instructions

1.In a large pot, bring salted water to a boil and cook pasta according to package instructions.
2.While pasta cooks, in a large skillet, heat olive oil over medium-heat.
3.Add onion, pancetta or bacon, and crushed red pepper flakes to the skillet and cook until pancetta or bacon has browned and onion has become translucent.
4.Add wine or vermouth to the skillet and bring to a boil.
5.Add the canned or chopped tomatoes and salt to taste. Stirring occasionally, let the sauce simmer for about 15 minutes until it thickens.
6.Drain pasta and add to the skillet with the sauce. The heat should be on low or turned off. Stir the sauce and pasta together.
7.Sprinkle freshly grated parmesan and pecorino cheese on top and serve hot.
