6 -8 fresh shiitake mushrooms , sliced
4 ounces oyster mushrooms , sliced
3 -4 cloves garlic , minced
2 cups low-fat milk
2 tablespoons fresh parsley , chopped
1 1/2 tablespoons Dijon mustard
1/2 teaspoon dried thyme
1/2 teaspoon white pepper
1/2 teaspoon salt
2 tablespoons cornstarch
2 tablespoons cold water

Instructions

1.Cook linguine according to package instructions and reserve 1 cup of pasta water.
2.Heat olive oil in a large skillet over medium-high heat. Add white wine, button mushrooms, shiitake mushrooms, oyster mushrooms, and garlic. Cook for 4-6 minutes, until mushrooms are tender.
3.In a separate bowl, whisk together low-fat milk, fresh parsley, Dijon mustard, dried thyme, white pepper, and salt.
4.Add the milk mixture to the mushroom skillet and bring to a simmer. Cook for 2-3 minutes, or until sauce begins to thicken.
