Ingredients

4 large chicken breasts ( about 170 to 200 g or 6 to 7 oz )
8 sage leaves
75 ml ricotta cheese
8 slices prosciutto di Parma
4 teaspoons olive oil
8 fresh thyme sprigs
sea salt
black pepper
Stuffed chicken breasts wrapped in sage and prosciutto is a traditional Italian-inspired recipe where the chicken breasts are stuffed with a combination of ricotta cheese and sage leaves in the middle, then wrapped with slices of prosciutto ham which is high in salt. Instructions

1.Preheat the oven to 200°C/400°F.
2.Butterfly the chicken breasts by slicing them horizontally, then flatten them with a meat hammer.
3.Season both sides of the chicken breasts with salt and black pepper.
4.Spread approximately 1 tbsp of ricotta cheese over each chicken breast.
5.Add 2 sage leaves on top of the ricotta cheese on each chicken breast.
6.Fold the chicken breasts in half and wrap each with two slices of prosciutto.
7.Rub each stuffed chicken breast with 1 tsp of olive oil and place 2 thyme sprigs on top.
8.Bake for 20-25 minutes until the chicken is cooked through.
9.Remove the thyme sprigs and serve.
