Ingredients

1 lb lean ground chuck
1/2 green tomato
1 small tomatoes
1 teaspoon oregano
1/4 teaspoon garlic powder
1 can tomato sauce ( I used mexican El Pato medium )
2 cups zucchini
1 cup cottage cheese
1/4 cup parmesan cheese
1 egg
1/2 cup mozzarella cheese
Low Carb Lasagna Mama is a healthy twist on one of our favorite dinners. Lasagna is a classic Italian dish where layers of noodles, sauce, meat, and cheese are baked to perfection. However, the pasta can be a carb-heavy addition to the dish. By replacing the lasagna noodles with zucchini, we reduce the carb content and increase the healthy veggies in the dish. This recipe is perfect for those looking for a healthier version of the classic lasagna.

Instructions

1.Preheat the oven to 375F.
2.Brown the ground chuck in a skillet.
3.Add crushed garlic, followed by chopped green tomato and small tomato. Cook until they are tender.
4.Add oregano, garlic powder, and El Pato tomato sauce. Cook for a few minutes.
5.Thinly slice zucchini and set aside.
6.In a large mixing bowl, combine cottage cheese, parmesan cheese, and egg. Mix well.
7.Grease an 8x8 baking dish with cooking spray. Layer the zucchini in the bottom of the dish, followed by the meat mixture.
8.Spoon half the cheese mixture over the meat, then repeat the layers.
9.Sprinkle mozzarella on top.
10.Bake for 35-40 minutes or until cheese is melted and bubbly. Let stand for ten minutes before slicing.
