Ingredients

1 quart chicken broth
1 1/2 cups water ( more if needed )
1 lb asparagus , trimmed , cut into 1/2 inch lengths , tips left whole
2 tablespoons butter
1 tablespoon vegetable oil
1 small onion , chopped
1 1/2 cups arborio rice
1/2 cup dry white wine
1 1/4 teaspoons salt
1/2 lb crabmeat , picked clean
1 teaspoon orange zest
2 garlic cloves , minced
1/4 cup fresh parsley , chopped
1/4 teaspoon black pepper
Asparagus Risotto with Crab and Orange Gremolada is a perfect meal for those who love rich flavors. Instructions

1.In a pot, bring chicken broth and water to a simmer. Keep the pot on low heat.
2.In a large skillet, cook asparagus in butter over medium heat for 3 minutes. Add salt and pepper and cook for another 2 minutes or until tender. Remove asparagus from the skillet and keep aside.
3.In the same skillet, add oil and sauté onion for 3 minutes until tender.
4.Add arborio rice and cook for 2 minutes or until they turn opaque. Stir in the white wine and let it simmer until the wine has been absorbed by the rice.
5.Add 1 cup of the hot broth and stir until the broth has been absorbed by the rice. Keep adding the broth 1 cup at a time and stirring constantly until the rice is tender and the mixture is creamy.
6.Stir in asparagus and crabmeat and cook for 2 minutes.
7.In a small bowl, combine orange zest, garlic, and parsley. Sprinkle this mixture over the prepared risotto before serving.
