1 eggplant

Instructions

1.Preheat the oven to 200C/400F.
2.Cut the eggplant into small cubes and sprinkle with salt. Let it sit for 30 minutes. Pat dry with paper towels.
3.Heat vegetable oil in a large frying pan over medium-high heat. Add eggplant and mushrooms. Cook until browned. Remove and put in a casserole dish.
4.Add butter to the frying pan and stir in onion. Cook until translucent.

6.Pour in the white wine, vegetable stock, cream, salt and pepper. Reduce heat to low and simmer for 10 minutes.
7.Cook penne in boiling salted water following the package instructions. Drain and add to the mushroom and eggplant mix. Pour the creamy sauce on top of the pasta and mix well. Bake in the oven for 15 minutes. Serve hot.
