Ingredients

1/3 cup extra-virgin olive oil
2 cups chopped onions
1 cup diced carrot
1 cup diced celery
2 tablespoons minced garlic
2 bay leaves
sea salt , preferably gray salt
2 cups red wine
6 cans whole tomatoes , pulsed in a blender
fresh ground black pepper
1 chicken , about 4 pounds
1/2 cup minced fresh basil
1/4 cup minced fresh Italian parsley ( flat-leaf )

Instructions

1.Preheat oven to 325°F.
2.Heat the olive oil in a large Dutch oven over medium heat.
3.Add onions, celery, and carrots, stir for about 20 minutes until they begin to soften.
4.Add garlic, bay leaves, and salt. Stir until fragrant.
5.Add wine and tomatoes. Stir well.
6.Using kitchen shears, cut chicken into 8 pieces.
7.Season chicken generously with salt and black pepper. Add to the pot, pushing the meat down to get it covered in sauce.
8.Simmer for 10-15 minutes.
9.Add basil and parsley. Cover and bake for at least 2 hours, stirring occasionally.
