Ingredients

1 large sweet potato
2 medium russet potatoes or 2 medium idaho potatoes
2 cups whole wheat flour , divided , plus additional flour for dusting on hands and cookie sheets

1 medium yellow onions or 1 medium white onion , diced
1 stalk celery , diced
2 medium carrots , diced
1 lb lean ground turkey breast
1 cup skim milk
1 can no-salt-added crushed tomatoes
1 can tomato paste
1 teaspoon dried Italian seasoning
2 tablespoons fresh basil , minced
sea salt & freshly ground black pepper , to taste ( optional )

Instructions

1.Preheat oven to 400°F.
2.Bake russet potatoes and sweet potatoes until soft.
3.Cut and peel sweet potatoes and russet potatoes.
4.Mash sweet potato and russet potato together until they are a smooth texture.
5.Fold in flour and knead the mixture into a dough.
6.Shape the dough into small balls.
7.Bring a pot of salted water to a boil. When boiling, add gnocchi and simmer for 2-3 minutes until they float to the top and are cooked through.
8.Drain gnocchi and set aside.
9.In a large saucepan, cook the onions, celery and carrots until tender.
10.Add ground turkey and cook until browned, then add crushed tomatoes, tomato paste, milk, Italian seasoning, basil, salt & pepper, and simmer for 15 minutes.
11.Serve the gnocchi with the light Bolognese sauce on top.
