Ingredients

1 1/4 lbs mild Italian sausage , casings removed
1 1/2 cups celery , sliced
2 cups fresh tomatoes , peeled , cut in wedges ( save juice ) or ( 28 ounce ) cans tomatoes
1 1/2 cups tomato juice
1 1/2 lbs zucchini , cut into 1/4 inch slices
2 teaspoons salt
1 1/2 teaspoons italian seasoning
1 teaspoon sugar
1/4 teaspoon garlic salt
2 green peppers , cut into 1 inch pieces
parmesan cheese , grated ( for garnish ) or romano cheese ( for garnish )

Instructions

1.Heat up a Dutch oven or heavy bottom pot over medium-high heat and add the sausage. Break it apart with a spatula and cook until browned and crispy, it should take approximately 5 to 7 minutes.
2.Remove the sausage with a slotted spoon and add the celery to the same pot. Saute for about 2-3 minutes, until it starts to soften.
3.Add the tomatoes, tomato juice, zucchini, salt, Italian seasoning, sugar, garlic salt and green bell peppers to the pot, stir and bring to a simmer. Allow it to cook, uncovered and stirring occasionally, until the zucchini is cooked and tender. It should take approximately 35-40 minutes.
4.If the stew looks too dry, add in some water. Be careful not to add too much, or it will end up more like soup.
5.Turn off the heat, taste test and adjust the seasoning as desired. Garnish with grated Parmesan cheese or Romano cheese.
