Ingredients

1 package whole wheat spiral pasta
green peppers or yellow pepper
1 zucchini
1 summer squash
1 onion
1 package veggie crumbles ( Or turkey if you prefer )
1 package soy mozzarella cheese ( can use Kraft Fat Free Cheese as well )
1 package soy cheddar cheese
2 cups fat-free cottage cheese
1/4 cup Egg Beaters egg substitute
Italian spices
fresh garlic
1 can no-sugar-added spaghetti sauce

Instructions

1.Preheat oven to 375° F.
2.Cook spiral pasta according to package instructions.
3.Chop onion, green pepper, zucchini, and squash into bite-sized pieces.
4.In a large skillet, cook veggie crumbles with garlic and Italian spices over medium heat until browned.
5.Add chopped vegetables and continue cooking until tender.
6.In a separate bowl, mix together fat-free cottage cheese and Egg Beaters.
7.In a 9x13 inch baking dish, spread a small amount of spaghetti sauce over the bottom.
8.Layer half of the cooked pasta on top of the sauce.
9.Layer half of the veggie crumbles and vegetables on top of the pasta.
10.Spread half of the cottage cheese mixture on top of the vegetables.
11.Repeat layers with remaining pasta, veggie crumbles and vegetables, and cottage cheese mixture.
12.Pour remaining spaghetti sauce over the top of the lasagna.
13.Sprinkle soy mozzarella and soy cheddar cheese on top of the sauce.
14.Cover with foil and bake for 25-30 minutes.
15.Remove foil and continue baking for an additional 10-15 minutes or until cheese is melted and bubbly.
