Instructions

1.Add the tomatoes, onion, garlic, tomato paste, salt, and pepper in a bowl. Toss, and set aside.
2.Preheat oven to 350F. Cook the pasta until it is al dente. Rinse under cold water and set aside.
3.In a medium bowl, mix the breadcrumbs, eggs, and flour until combined. Dip the mozzarella slices in the mixture, ensuring that the cheese is coated.
4.Heat a skillet over medium heat. Cook the cheese slices until golden brown, for about one minute on each side. Move cheese to an oven-safe dish.
5.Season the shrimp with garlic, salt, and pepper. Add the shrimp and red pepper flakes to the skillet, stirring constantly until cooked through.
6.Pour the wine into the skillet, stirring continuously for approximately two minutes until aromatic. Add the parsley and tomato mixture. Simmer for five to ten minutes.
7.Spoon the shrimp mixture over the cheese slices, and bake for ten minutes in the oven.
8.Squeeze lemon juice over the shrimp parm and pasta. Serve hot.
