Ingredients

1 cup butter , softened
1 cup white sugar
3 eggs
1/4 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/8 teaspoon salt
2 drops red food coloring
1 cup apricot preserves
2 cups ground almonds
3 cups confectioners ' sugar
1 egg , room temperature
1 1/2 teaspoons lemon juice
1/4 teaspoon almond extract
Battenburg Cake is a wonderful dessert that originated from the UK and is often served at afternoon tea. The cake has a distinctive checkerboard design and is typically made of almond sponge cake and apricot preserves wrapped in marzipan. Instructions

1.Preheat the oven to 350°F (175°C).
2.Grease and flour an 8 inch square pan and line with parchment paper.
3.In a large mixing bowl, cream together butter and sugar until light and fluffy.
4.Beat in eggs one at a time, followed by vanilla extract.
5.In a separate bowl, whisk together flour, baking powder and salt.
6.Fold dry ingredients into wet mixture until just combined.
7.Divide batter into two equal parts.
8.Stir in red food coloring into one portion of batter.
9.Pour each portion of batter separately into half of the pan.
10.Bake for 25-30 min until cake tester comes out clean.
11.Allow the cake to cool for 5 min before transferring to cooling rack to cool completely.
12.Spread apricot preserves on top of one layer of cake.
13.Top with the other color of cake and trim both ends to form a square.
14.Roll out almond paste thinly and cover the cake with it.
15.Dust a clean surface with confectioners' sugar and roll out marzipan into a rectangular shape.
16.Place the cake on top of the marzipan and wrap the marzipan around the cake to cover all four sides and form a neat seam at the base.
17.Brush lightly with beaten egg mixed with lemon juice and almond extract.
18.Allow to dry before serving.
