Ingredients

1/2 cup olive oil , divided
6 garlic cloves , sliced
1 teaspoon red pepper flakes
1 can diced tomatoes with garlic and olive oil
1/2 cup tomato sauce
1 bunch fresh basil , chopped
1 package dry penne pasta
2 eggs
2 cups breadcrumbs
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon pepper
1 lb chicken cutlet
Penne Arrabiata is a classic Italian dish that originated in Rome. Arrabiata means 'angry', which refers to the fiery spiciness of the red pepper flakes used in the dish. Instructions

1.Boil a large pot of salted water. Add penne and cook according to the instruction on the package
2.Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes and saute until fragrant, about 1 minute.
3.Add diced tomatoes, tomato sauce, and basil and stir to combine. Simmer for 10 minutes, stirring occasionally.
4.While the sauce is simmering, prepare the chicken cutlet by beating eggs in a shallow dish. In another shallow dish, blend breadcrumbs, garlic powder, salt and pepper.
5.Dip each chicken cutlet in the egg mixture then in the breadcrumb mixture. Shake off any excess breading.
6.Heat 1/4 cup of olive oil in a non-stick skillet over medium-high heat. Add chicken cutlets when the oil is hot and cook until golden brown and cooked through, about 2-3 minutes per side.
7.Drain penne and add it to the sauce. Toss to combine. Add the chicken cutlets on top and serve immediately.
