1 1/4 teaspoons salt
2 tablespoons butter
1/4 teaspoon fresh ground black pepper
2 ounces mild goat cheese , such as Montrachet , crumbled
grated parmesan cheese , for serving

Instructions

1.In a small bowl, soak the dried mushrooms in hot water for 30 minutes, until soft. Strain and reserve the soaking liquid.
2.In a large saucepan, heat the chicken broth and reserved mushroom liquid over low heat until hot.
3.In another large saucepan, heat the olive oil over medium heat. Add the chopped onion and cook, stirring occasionally, until softened, about 5 minutes. Add the minced garlic and cook for an additional minute.
4.Add the arborio rice to the saucepan and stir to coat with the onion and garlic mixture. Cook for 2-3 minutes, stirring constantly, until the rice is lightly toasted.
5.Add 1/2 cup of the hot broth to the rice mixture and stir until the liquid is absorbed. Repeat with additional 1/2 cup increments of broth, stirring constantly, until the rice is tender and creamy.
6.Stir in the soaked mushrooms, salt, butter, and black pepper. Cook for another 2-3 minutes, or until heated through.
7.Remove from heat and stir in the crumbled goat cheese. Serve hot with grated parmesan cheese sprinkled on top.
